TrendingBreakfastBowlHealthyQuickVegetarianNo-cookAmerican
Ingredients
- 2 cups frozen banana chunks
- 1 cup frozen mango chunks
- 2 packed cups fresh baby spinach
- 1/2 ripe avocado
- 3/4 cup, plus more as needed unsweetened almond milk
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lime juice
- 1 tbsp honey or maple syrup
- 2 tbsp hemp hearts
- 1/2 cup granola
- 1 fresh kiwi, sliced
- 1/2 cup fresh blueberries
- 2 tbsp unsweetened coconut flakes
- 1 tsp chia seeds
Instructions
- 1Add the frozen banana, frozen mango, baby spinach, avocado half, almond milk, Greek yogurt, lime juice, and honey to a high-speed blender.
- 2Blend on high, stopping to scrape down the sides once or twice, until completely smooth and thick like soft-serve ice cream, 45 to 60 seconds. If the mixture is too stiff to blend, add almond milk at a time until it just moves.
- 3Taste and adjust sweetness with a little more honey if needed. The texture should be spoonable, not pourable.
- 4Divide the thick smoothie between two chilled bowls, using the back of a spoon to create a shallow well in the center for toppings.
- 5Arrange the sliced kiwi, fresh blueberries, granola, hemp hearts, coconut flakes, and a sprinkle of chia seeds in neat rows or clusters across the surface for that classic smoothie-bowl look.
- 6Serve immediately with a spoon while the base is still frosty cold.
- 7For meal-prep ease, freeze the fruit portions ahead in bags so weekday assembly takes under 5 minutes.
