Ingredients
- 1 large ripe avocado
- 1 large, sliced frozen banana
- 2 packed cups baby spinach
- 3/4 cup plain Greek yogurt
- 1/2–3/4 cup unsweetened almond milk
- 1 1/2 Tbsp fresh lime juice
- 1–2 Tbsp honey or maple syrup
- 1/2-inch piece, peeled fresh ginger
- 1 Tbsp, plus more for topping chia seeds
- 1/2 cup granola
- 1, peeled and sliced kiwi
- 1/2 cup fresh blueberries or raspberries
- 2 Tbsp toasted coconut flakes
- 1 Tbsp hemp hearts
Instructions
- 1Halve the avocado, remove the pit, and scoop the flesh into a high-speed blender. Add the frozen banana slices, spinach, Greek yogurt, almond milk, lime juice, honey, ginger, and chia seeds.
- 2Blend on high 45–75 seconds, stopping to scrape down the sides once, until completely smooth, thick, and bright green. The texture should be spoonable like soft-serve—add almond milk at a time only if the blades stall.
- 3Taste and adjust sweetness with a little more honey or brightness with an extra squeeze of lime. If the mixture is too loose for a bowl, freeze 10 minutes or blend in a few ice cubes.
- 4Divide the smoothie between two chilled bowls, using the back of a spoon to create a shallow well and smooth surface for toppings.
- 5Arrange kiwi slices, berries, and granola in neat rows or clusters on top. Sprinkle with toasted coconut, hemp hearts, and an extra pinch of chia seeds.
- 6Serve immediately with a spoon while the base is still thick and cold; the contrast of creamy avocado blend and crunchy granola is best before it melts.
