Ingredients

  • 2 cups full-fat plain Greek yogurt
  • 2 large heirloom tomatoes
  • 1 cup fresh sweet corn kernels
  • 1/2 English cucumber
  • 1/3 cup crumbled feta cheese
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp chopped fresh dill
  • 1 tbsp chopped fresh mint
  • 1 lemon
  • 2 tsp everything bagel seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 soft-boiled eggs

Instructions

  1. 1Bring a small saucepan of water to a gentle boil. Lower the eggs in carefully and cook exactly 6 minutes 30 seconds for jammy yolks, then transfer immediately to an ice bath for 2 minutes; peel and set aside.
  2. 2While the eggs cook, cut the heirloom tomatoes into thick wedges or large chunks and place them in a bowl. Season lightly with salt and a squeeze of lemon so their juices start to release.
  3. 3Heat a dry skillet over medium-high heat. Add the sweet corn kernels and cook 3 to 4 minutes, stirring once or twice, until lightly blistered and sweet-smelling; remove from heat.
  4. 4Dice the cucumber into small cubes. In a small bowl toss the cucumber with salt, half the dill, half the mint, and a drizzle of olive oil.
  5. 5Divide the Greek yogurt between two shallow bowls, spreading it into a thick base layer with the back of a spoon and creating a slight well in the center.
  6. 6Arrange the seasoned heirloom tomato wedges and blistered corn over the yogurt. Nestle the cucumber mixture alongside and crumble feta over everything.
  7. 7Halve the soft-boiled eggs and place them cut-side up on each bowl. Drizzle the remaining olive oil over the top, finish with everything bagel seasoning, remaining herbs, black pepper, and a final lemon squeeze.
