Ingredients

  • 4 everything bagels
  • 6 large eggs
  • 3 tbsp whole milk
  • 4 slices sharp cheddar cheese
  • 8 slices thinly sliced deli ham or turkey
  • 2 tbsp unsalted butter
  • 4 tbsp cream cheese
  • 2 tbsp chopped fresh chives
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • to taste hot sauce

Instructions

  1. 1Split the everything bagels and lightly toast them cut-side up under a broiler set to high for 1–2 minutes until the edges are golden and crisp but the centers stay chewy. Set aside.
  2. 2In a medium bowl whisk the eggs, milk, salt, and pepper until fully combined and slightly frothy, about 30 seconds.
  3. 3Melt butter in a 10-inch nonstick skillet over medium-low heat. Pour in the egg mixture and let it sit undisturbed for 20 seconds until the edges just begin to set.
  4. 4Using a rubber spatula, gently push the cooked edges toward the center while tilting the pan so uncooked egg flows underneath. Continue for 2–3 minutes until soft curds form but the eggs still look slightly glossy and wet.
  5. 5Fold the sliced ham into the eggs for the last 30 seconds so it warms through, then remove the pan from heat. The residual heat will finish cooking the eggs to creamy, not rubbery.
  6. 6Spread cream cheese on the bottom half of each toasted bagel. Divide the scrambled eggs and ham evenly among the four bottoms.
  7. 7Top each pile with a slice of cheddar. Place the open-faced sandwiches under the broiler for 45–60 seconds just until the cheese melts and bubbles.
  8. 8Crown with the bagel tops, sprinkle chopped chives over any visible eggs, and add hot sauce if desired. Serve immediately while the cheese is stretchy and the bagel is still warm.
