Everything-Bagel Avocado Toast with Soft-Boiled Eggs & Hot Honey

Ingredients

  • 2, halved and toasted everything bagels
  • 2 ripe avocados
  • 2 large eggs
  • 1 tbsp fresh lemon juice
  • 1/2 tsp plus more to taste kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp red pepper flakes
  • 2 tbsp hot honey
  • 2 tbsp, chopped fresh dill or chives
  • 1 tsp extra for sprinkling everything bagel seasoning
  • 1 tbsp, softened butter

Instructions

  1. 1Bring a small saucepan of water to a rolling boil. Gently lower in the eggs with a spoon and boil exactly 6½ minutes for jammy yolks. Transfer immediately to an ice bath and cool 2 minutes, then peel carefully under cool running water.
  2. 2While the eggs cook, toast the bagel halves until deep golden and crisp. Spread each cut side lightly with softened butter so the avocado sticks and the toast stays rich.
  3. 3Halve and pit the avocados. Scoop the flesh into a bowl, add lemon juice, salt, black pepper, and red pepper flakes, then mash with a fork to a chunky-smooth texture—leave some small pieces for bite.
  4. 4Divide the avocado mash evenly among the four toasted bagel halves, spreading it thickly to the edges. Sprinkle extra everything-bagel seasoning over each.
  5. 5Slice each soft-boiled egg in half lengthwise so the jammy yolk is visible. Nestle two egg halves on top of each open-faced bagel toast.
  6. 6Drizzle hot honey over each toast so it pools into the avocado and drips onto the egg. Finish with chopped dill or chives and a final crack of black pepper.
  7. 7Serve right away while the toast is still warm and the egg yolks are soft. Provide extra hot honey and flaky salt at the table for customizing heat and seasoning.
  8. 8If prepping for two people with different schedules, keep peeled eggs in the fridge up to 2 days and assemble toasts just before eating.
