Ingredients
- 8 small corn tortillas
- 8 large eggs
- 2 cups fresh sweet corn kernels
- 2 large heirloom tomatoes
- 1/2 cup crumbled cotija cheese
- 1 ripe avocado
- 2 tbsp chili crisp
- 2 tbsp hot honey
- 1 lime
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- 1/4 cup sour cream or Mexican crema
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
Instructions
- 1Preheat the oven to 400°F and line a sheet pan with parchment. Arrange the corn tortillas in a single layer, brush lightly with olive oil on both sides, and bake 6–8 minutes until lightly golden and crisp at the edges; flip once halfway so they stay flat and sturdy.
- 2While the tortillas crisp, heat a large nonstick skillet over medium-high heat with a drizzle of olive oil. Add the sweet corn kernels in an even layer and let them sit undisturbed 2–3 minutes until the undersides char and smell sweet and toasty.
- 3Stir the corn, season with salt, garlic powder, and smoked paprika, and cook another 2 minutes until bright and lightly blistered. Transfer most of the charred corn to a bowl, leaving a spoonful in the skillet for the eggs.
- 4Dice the heirloom tomatoes into bite-size chunks and place in a small bowl. Squeeze half the lime over them, add salt and half the chopped cilantro, then toss gently so the juices release without turning the tomatoes mushy.
- 5Return the skillet to medium-low heat and add a little more olive oil if the pan looks dry. Crack in the eggs and scramble slowly with a silicone spatula, folding rather than stirring hard, until the curds are soft, custardy, and just barely set—about 3–4 minutes. Season with salt and black pepper.
- 6Fold the reserved charred corn into the soft eggs during the last 30 seconds so the kernels warm through without overcooking the eggs. Remove the skillet from heat immediately so the eggs stay creamy.
- 7Slice the avocado and squeeze the remaining lime half over it. Warm the hot honey briefly if it is thick so it drizzles easily.
- 8Build each tostada: spread a thin swipe of sour cream or crema on a crisp tortilla, pile on soft scrambled eggs with corn, top with diced heirloom tomato mixture and avocado slices.
- 9Finish with crumbled cotija, a spoonful of chili crisp, a drizzle of hot honey, and the remaining cilantro. Serve two tostadas per person right away while the tortillas are still shatter-crisp and the eggs are warm.
