
Crispy Zucchini-Corn Fritters with Soft Eggs & Peach Pico

Ingredients
- 2 medium zucchini
- 1 cup fresh sweet corn kernels
- 6 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup grated Parmesan
- 3 green onions
- 1 large ripe peach
- 1 small heirloom tomato
- 1 small jalapeño
- 1/4 cup fresh cilantro
- 1 lime
- 1/2 tsp garlic powder
- 1 1/4 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup neutral oil for frying
- 1/4 cup sour cream
Instructions
- 1Grate the zucchini on the large holes of a box grater, toss with half the salt, and let drain in a colander for 10 minutes; then squeeze firmly in a clean towel until very dry.
- 2In a mixing bowl combine the squeezed zucchini, corn kernels, two beaten eggs, flour, Parmesan, sliced green onions, garlic powder, remaining salt, and black pepper until a thick batter forms.
- 3Dice the peach, tomato, and seeded jalapeño; toss with chopped cilantro, lime juice, and salt to make a bright peach pico.
- 4Heat a thin layer of oil in a large nonstick skillet over medium heat until shimmering.
- 5Scoop heaping spoonfuls of batter into the pan and flatten gently into fritters; cook in batches without crowding.
- 6Fry until deep golden and crisp on the bottom, then flip and cook the second side until browned and cooked through.
- 7Transfer fritters to a paper-towel-lined plate and keep warm.
- 8In the same skillet wipe out excess oil if needed, then fry the remaining eggs to sunny-side up or over-easy with set whites and runny yolks.
- 9Plate two fritters per person, top each stack with a soft egg, and spoon peach pico generously over the top.
- 10Add a dollop of sour cream and an extra squeeze of lime.
- 11Serve at once so the fritters stay crunchy against the juicy pico and creamy yolk.
