- 2 medium zucchini
- 1 cup fresh corn kernels
- 6 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 3/4 cup shredded sharp cheddar
- 3 green onions, thinly sliced
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 Tbsp neutral oil for frying
- 3 Tbsp hot honey
- 1/4 cup fresh basil leaves
Instructions
- 1Grate the zucchini on the large holes of a box grater and pile it into a clean kitchen towel. Squeeze firmly over the sink until most of the liquid runs out; you want the shreds quite dry so the fritters crisp.
- 2Transfer the squeezed zucchini to a large mixing bowl. Add the fresh corn kernels, flour, cornmeal, shredded cheddar, sliced green onions, garlic powder, smoked paprika, salt, and pepper. Crack in two of the eggs and stir until a thick, cohesive batter forms with no dry pockets.
- 3Heat a large nonstick or cast-iron skillet over medium heat and add enough oil to lightly coat the bottom. When the oil shimmers, scoop heaping tablespoons of batter into the pan, flattening each gently into a 3-inch round. Do not crowd; work in batches.
- 4Cook the fritters 3 to 4 minutes per side until deep golden brown and crisp at the edges, adjusting heat if they brown too fast. Transfer finished fritters to a wire rack or paper-towel-lined plate and keep warm.
- 5Wipe the skillet if needed, add a thin film of fresh oil, and crack the remaining four eggs into the pan. Cook sunny-side up or over-easy 2 to 3 minutes until whites are set and yolks still runny, seasoning lightly with salt and pepper.
- 6Arrange two fritters on each plate and top with a fried egg. Drizzle generously with hot honey so it pools into the yolk and fritter edges.
- 7Tear fresh basil leaves over the top for a bright finish. Serve immediately while the fritters are still shatter-crisp and the honey is warm.
