Crispy Egg and Black Bean Breakfast Quesadillas

Ingredients

  • 6 large eggs
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter
  • 1 can (15 oz) canned black beans, rinsed and drained
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 1/2 cups shredded Monterey Jack or Mexican blend cheese
  • 4 flour tortillas (8-inch)
  • 2 tbsp neutral oil or butter for crisping
  • 1 cup fresh salsa or pico de gallo
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro leaves
  • 1 lime lime wedges

Instructions

  1. 1In a bowl, beat the eggs with salt and the black pepper until uniform. Melt butter in a nonstick skillet over medium heat. Pour in the eggs and scramble gently, pushing curds from the edges toward the center, until just set but still soft and glossy, 2 to 3 minutes. Transfer to a plate; do not overcook.
  2. 2In the same skillet, add the black beans, cumin, chili powder, and remaining salt. Cook over medium heat, stirring and lightly mashing half the beans, until hot and slightly thickened, 2 to 3 minutes. Remove from heat.
  3. 3Lay the four tortillas on a work surface. Sprinkle 2 to cheese over one half of each tortilla. Divide the scrambled eggs and seasoned black beans evenly on top of the cheese, then add another sprinkle of cheese. Fold the empty half over to close.
  4. 4Wipe the skillet clean and heat oil or butter over medium heat. Place one or two quesadillas in the pan (whatever fits without crowding). Cook until the underside is deep golden and crisp, 2 1/2 to 3 1/2 minutes.
  5. 5Flip carefully with a spatula and cook the second side until equally golden and the cheese is fully melted, another 2 to 3 minutes. Transfer to a cutting board and repeat with remaining quesadillas, adding more oil as needed.
  6. 6Let each quesadilla rest 1 minute so the filling sets, then cut into three wedges with a sharp knife or pizza cutter.
  7. 7Serve immediately topped with fresh salsa, avocado slices, cilantro, and a squeeze of lime. The crispy tortilla, melty cheese, soft eggs, and spiced beans make a complete handheld breakfast.
