Ingredients
- 8 slices thick-cut bacon
- 6 large eggs
- 2 Tbsp whole milk
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large (10-inch) flour tortillas
- 2 Tbsp unsalted butter
- 3, thinly sliced scallions

Instructions
- 1Place bacon in a single layer in a cold 12-inch skillet. Turn heat to medium and cook 8–10 minutes, flipping once, until fat renders and bacon is deeply crisp and mahogany. Transfer to a paper-towel-lined plate; pour off all but bacon fat.
- 2In a medium bowl whisk eggs, milk, salt, and pepper until the yolks and whites are fully blended and slightly frothy.
- 3Return the skillet with reserved bacon fat to medium-low heat. Pour in the eggs and cook, stirring slowly with a silicone spatula, 2–3 minutes until soft curds form and eggs are just set but still glossy. Remove from heat immediately so they stay creamy.
- 4Chop the cooled bacon into bite-size pieces. Mix the cheddar and Monterey Jack together in a small bowl.
- 5Lay tortillas flat. On the bottom half of each tortilla sprinkle a generous layer of cheese, then top with a quarter of the scrambled eggs, chopped bacon, and a sprinkle of scallions. Finish with a little more cheese so it acts as glue. Fold the empty half over the filling and press gently.
- 6Wipe the skillet clean and melt butter over medium heat. Place one folded quesadilla in the pan and cook 2–3 minutes until the underside is deep golden and crisp and cheese begins to melt.
- 7Flip carefully with a wide spatula and cook another 2–3 minutes until the second side is equally golden and the cheese is fully melted and oozing at the edges. Transfer to a cutting board.
- 8Repeat with remaining butter and quesadillas. Let each rest 1 minute so the cheese sets slightly, then cut into three wedges with a sharp knife or pizza cutter.
- 9Serve hot with hot sauce or salsa on the side and extra cilantro if desired. The exterior should shatter lightly while the interior stays gooey and savory.
