Ingredients

  • 3 medium zucchini
  • 6 large eggs
  • 3/4 cup panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 large ripe peach
  • 2 tbsp minced red onion
  • 1 small jalapeño
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh mint or basil
  • as needed olive oil spray
  • 1/2 cup Greek yogurt

Instructions

  1. 1Grate the zucchini on the large holes of a box grater. Toss with salt and let drain in a colander 10 minutes, then squeeze firmly in a clean kitchen towel until almost no liquid remains.
  2. 2In a bowl combine the squeezed zucchini, two beaten eggs, panko, Parmesan, flour, garlic powder, remaining salt, and pepper. Mix until a cohesive batter forms that holds when pressed.
  3. 3Scoop 2-tablespoon mounds and flatten into 1/2-inch-thick fritters. Arrange in a single layer in the air-fryer basket, spray lightly with olive oil, and air-fry at 375°F for 8 minutes. Flip, spray again, and cook 5 to 6 minutes more until deep golden and crisp on both sides.
  4. 4While fritters cook, dice the peach, mince the jalapeño (seeds removed for milder heat), and combine with red onion, lime juice, chopped herbs, and salt to make a quick salsa.
  5. 5Bring a shallow pan of water to a bare simmer. Crack the remaining four eggs into individual ramekins, slide them in, and poach 3 to 4 minutes until whites are set and yolks are still soft; lift out with a slotted spoon onto a paper towel.
  6. 6Plate three hot fritters per person, top each stack with a poached egg, spoon peach salsa over and around, and finish with a spoonful of cool Greek yogurt. Serve immediately so the fritters stay crunchy.
