Ingredients
- 8 patties frozen shredded hash brown patties
- 4 large eggs
- 4 American or cheddar cheese slices
- 8 cooked bacon strips
- 4 soft potato rolls or English muffins
- 2 tbsp butter, softened
- to taste hot sauce or ketchup
- to taste kosher salt and black pepper
- as needed cooking spray
Instructions
- 1Preheat the air fryer to 400°F for 3 minutes. Lightly spray both sides of the frozen hash brown patties with cooking spray and arrange them in a single layer in the basket (work in batches if needed).
- 2Air-fry the hash browns for 10–12 minutes, flipping halfway, until deep golden and shatter-crisp on the edges. Transfer to a wire rack so they stay crunchy.
- 3While the hash browns cook, toast the split potato rolls or English muffins until lightly golden. Spread the cut sides with softened butter.
- 4Heat a nonstick skillet over medium-low. Crack in the eggs and cook sunny-side-up or over-easy for 3–4 minutes until the whites are set but yolks still jammy; season with salt and pepper.
- 5Place one hot hash brown on the bottom half of each roll. Top with a cheese slice so it starts to melt from the residual heat, then add bacon strips and one fried egg.
- 6Cap each sandwich with a second hash brown patty and the top bun. Gently press so the cheese glues everything together.
- 7Serve immediately with hot sauce or ketchup on the side. For meal prep, wrap cooled sandwiches in foil and reheat in a 350°F oven or air fryer for 8 minutes.
