Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1 large crisp apple (Honeycrisp or Gala), grated
  • 3 tbsp maple syrup
  • 3/4 cup plain Greek yogurt
  • 2 tbsp butter or neutral oil for cooking
  • 1/4 cup chopped toasted walnuts

Instructions

  1. 1Add the rolled oats to a blender and pulse until they form a coarse flour, about 20 seconds. Scrape down the sides so everything is even.
  2. 2Add the cottage cheese, eggs, almond milk, protein powder, baking powder, cinnamon, salt, and half the maple syrup to the blender. Blend until the batter is smooth and thick, about 30 to 45 seconds.
  3. 3Fold the grated apple into the batter with a spatula until evenly distributed. Let the batter rest 5 minutes so the oats hydrate and the pancakes hold better.
  4. 4Heat a large nonstick skillet or griddle over medium heat and lightly grease with butter or oil. When a drop of water sizzles, the pan is ready.
  5. 5Scoop batter per pancake into the pan, leaving space between them. Cook until bubbles form on the surface and the edges look set and lightly golden, 2 to 3 minutes.
  6. 6Flip carefully and cook the second side until golden brown and cooked through, another 1 to 2 minutes. Transfer finished pancakes to a warm plate and repeat with remaining batter, greasing as needed.
  7. 7Stir the remaining maple syrup into the Greek yogurt until smooth and lightly sweet. Taste and adjust sweetness if desired.
  8. 8Stack three pancakes per plate, spoon the maple yogurt over the top, and finish with a sprinkle of toasted walnuts. Serve immediately while the pancakes are still warm and fluffy.
