Ingredients

  • 1 1/2 cups low-fat cottage cheese
  • 3 large eggs
  • 1 cup rolled oats
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups fresh blueberries
  • 3 Tbsp maple syrup
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 2 Tbsp butter or neutral oil
  • 1/2 cup Greek yogurt for serving

Instructions

  1. 1Add the cottage cheese, eggs, rolled oats, vanilla, baking powder, cinnamon, and salt to a blender. Blend on high for 45–60 seconds until the batter is completely smooth and pourable with no oat flecks remaining.
  2. 2Let the batter rest 5 minutes so the oats hydrate and the mixture thickens slightly; it should coat the back of a spoon. Meanwhile, make a quick blueberry compote: combine blueberries, maple syrup, lemon zest, and lemon juice in a small saucepan.
  3. 3Bring the blueberry mixture to a simmer over medium heat, then reduce to medium-low and cook 6–8 minutes, stirring often and lightly mashing some berries, until jammy and glossy. Stir in the remaining whole blueberries off heat and set aside.
  4. 4Heat a large nonstick skillet or griddle over medium heat and add butter, swirling to coat. When the fat shimmers, scoop 1/4-cup portions of batter into the pan, spacing them apart (you should fit 3–4 pancakes).
  5. 5Cook undisturbed 2–3 minutes until bubbles form across the surface and the edges look set and lightly golden. Flip carefully and cook another 1 1/2–2 minutes until the undersides are deep golden and the centers spring back when lightly pressed.
  6. 6Transfer cooked pancakes to a warm plate and tent loosely with foil. Repeat with remaining batter, adding more butter between batches and lowering the heat slightly if the pan starts to smoke.
  7. 7Stack 3 pancakes per plate. Spoon warm lemon-blueberry compote over the top so it drips down the sides, then add a dollop of Greek yogurt.
  8. 8Serve immediately while the pancakes are fluffy and the compote is still warm. Leftover pancakes reheat well in a toaster or 300°F oven for 5 minutes.
