- 1 1/2 cups low-fat cottage cheese
- 2 cups frozen mixed berries
- 1 large frozen banana, sliced
- 1/2 cup, plus more as needed unsweetened almond milk
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1 tbsp chia seeds
- 1/2 cup granola
- 1/2 cup fresh strawberries, sliced
- 1/4 cup fresh blueberries
- 2 tbsp sliced almonds
- 1 tbsp hemp hearts
Instructions
- 1Add the cottage cheese, frozen mixed berries, frozen banana slices, almond milk, honey, vanilla, and chia seeds to a high-speed blender.
- 2Blend on high for 45 to 60 seconds, stopping once to scrape down the sides, until the mixture is thick, ultra-smooth, and soft-serve-like. If the blades stall, add almond milk at a time—keep it spoonable, not drinkable.
- 3Taste and adjust sweetness with an extra drizzle of honey if your berries are tart. The texture should hold peaks on a spoon.
- 4Divide the smoothie base between two chilled shallow bowls, using the back of a spoon to create a slight well in the center for toppings.
- 5Arrange the granola in a crescent along one side of each bowl. Fan the sliced strawberries and scatter fresh blueberries opposite the granola.
- 6Sprinkle sliced almonds and hemp hearts over the top for crunch and extra protein. Serve immediately with a spoon before the base softens.
