Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 1 1/4 cups whole milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/3 cup packed brown sugar
  • 1 1/2 tsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2–3 tbsp milk for glaze

Instructions

  1. 1In a large bowl whisk together the flour, baking powder, granulated sugar, and salt until no lumps remain.
  2. 2In a separate bowl whisk the milk, egg, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry and stir gently just until combined; a few small lumps are fine.
  3. 3In a small bowl stir together the brown sugar, cinnamon, and remaining melted butter to make a thick cinnamon swirl paste.
  4. 4Heat a 10-inch nonstick or well-seasoned cast-iron skillet over medium heat for 2 minutes. Lightly grease if needed, then pour in all the pancake batter and smooth the top.
  5. 5Drop spoonfuls of the cinnamon-sugar paste over the batter in a loose spiral or dotted pattern. Use a knife or skewer to gently swirl it through the batter without fully mixing it in.
  6. 6Cover the skillet with a lid and cook over medium-low heat for 8–10 minutes, until the edges look set, bubbles appear on the surface, and the bottom is golden brown when you peek with a spatula.
  7. 7While the pancake cooks, beat the softened cream cheese, powdered sugar, and milk until smooth and pourable; add the extra tablespoon of milk if needed for a drizzling consistency.
  8. 8Carefully flip the entire pancake with a large spatula (or slide onto a plate and invert back into the skillet) and cook uncovered 2–3 minutes more until cooked through and lightly browned on the second side.
  9. 9Remove from heat, drizzle generously with the cream cheese glaze while still warm, cut into wedges, and serve immediately.
