  • 3 tbsp brown sugar
  • 2 tsp baking powder

  • 1/2 tsp salt
  • 2 large eggs
  • 1 2/3 cups milk
  • 1/3 cup unsalted butter, melted
  • 1 1/2 tsp vanilla extract
  • 2 cups ripe peaches, diced
  • 3/4 cup old-fashioned oats
  • 1/3 cup chopped pecans
  • 1/4 cup brown sugar for topping
  • 3 tbsp cold unsalted butter, cubed
  • 1/2 tsp ground cinnamon for topping
  • 1 pinch pinch of salt for topping
  • 1 cup vanilla yogurt or whipped cream
  • 1/4 cup maple syrup

Instructions

  1. 1Preheat the oven to 350°F and line a small baking sheet with parchment. Preheat the waffle iron to medium-high until ready.
  2. 2Make the crisp topping first: in a bowl, combine oats, pecans, brown sugar for topping, cinnamon for topping, and salt. Cut in the cold cubed butter with your fingers until clumpy. Spread on the sheet and bake 10 to 12 minutes until golden and fragrant, stirring once; cool slightly.
  3. 3For the waffle batter, whisk flour, brown sugar, baking powder, ground cinnamon, nutmeg, and salt in a large bowl.
  4. 4In a medium bowl, whisk eggs, milk, melted butter, and vanilla until smooth. Pour into the dry ingredients and stir just until combined; fold in half of the diced peaches so fruit is suspended throughout.
  5. 5Rest the batter 5 minutes. Lightly spray the hot waffle iron, then portion batter onto the grids, making sure a few peach pieces land in each section.
  6. 6Close and cook until the waffles are deep golden brown, edges look crisp, and the cinnamon aroma is strong, about 4 to 6 minutes. Transfer to a rack and keep warm at 200°F.
  7. 7While waffles finish, warm the remaining diced peaches in a small skillet over medium heat for 2 to 3 minutes until juicy and just softened, stirring gently so they keep their shape.
  8. 8Plate two waffles per serving. Spoon the warm peaches over the top, then shower generously with the baked oat-pecan crisp so every bite has crunch.
  9. 9Add a spoonful of vanilla yogurt or a swirl of whipped cream and a light drizzle of maple syrup. Serve at once while the waffle is crisp and the topping still crackles.
