- 4 large eggs
- 2 slices (1-inch thick) thick-cut sourdough bread
- 3/4 cup plain full-fat Greek yogurt
- 1 small, finely grated garlic clove
- 1 Tbsp fresh lemon juice
- 2 Tbsp unsalted butter
- 2–3 Tbsp chili crisp (store-bought)
- 2 Tbsp, chopped fresh chives or dill
- 1/4 tsp plus pinches kosher salt

- 1 tsp honey (optional)
Instructions
- 1In a medium bowl, stir together the Greek yogurt, finely grated garlic, lemon juice, and kosher salt until completely smooth. Taste and, if you like a touch of sweetness against the heat, whisk in up to honey. Set the bowl aside at room temperature so the raw garlic mellows while you cook.
- 2Crack the eggs into a separate bowl. Add kosher salt and several grinds of black pepper, then whisk vigorously with a fork for 20–30 seconds until the mixture is uniform in color and slightly frothy. Set aside near the stove.
- 3Place a large nonstick skillet over medium heat. Add the two sourdough slices and toast 2–3 minutes per side, pressing lightly with a spatula, until both sides are deep golden-brown and crisp on the exterior while still tender inside. Transfer each slice to a serving plate.
- 4Wipe the skillet clean if any crumbs remain, then return it to medium-low heat. Add the butter and swirl until fully melted and just beginning to foam, about 30 seconds—do not let it brown deeply.
- 5Pour the beaten eggs into the foaming butter. Using a silicone spatula, slowly push the eggs from the edges toward the center in long, gentle strokes, forming large soft curds. Continue this motion for 1½ to 2½ minutes total.
- 6When the eggs still look glossy and slightly underdone (they should jiggle softly), immediately remove the skillet from the heat; residual heat will finish them to a creamy soft scramble.
- 7Divide the soft-scrambled eggs evenly over the two pieces of toast. Spoon a generous layer of the garlic yogurt (about ⅓ to per plate) and partly under the eggs so every bite gets some.
- 8Spoon 1 to 1½ tablespoons of chili crisp over each serving, letting the crunchy bits and red oil cascade over the eggs and yogurt. Finish with a shower of chopped chives or dill, flaky sea salt, and extra black pepper. Serve at once while the toast is still crisp and the eggs are warm.
