Chili-Crisp Soft Eggs with Blistered Heirloom Tomatoes & Corn

Ingredients

  • 1 lb heirloom tomatoes
  • 2 cups fresh sweet corn kernels
  • 8 large eggs
  • 3 Tbsp chili crisp
  • 2 Tbsp extra-virgin olive oil
  • 2 garlic cloves
  • 1/4 cup fresh basil leaves
  • 3 green onions
  • 1/2 cup crumbled feta
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp butter

Instructions

  1. 1Halve or quarter the heirloom tomatoes depending on size and pat them dry so they blister instead of steam. Mince the garlic and thinly slice the green onions, keeping whites and greens separate. Tear the basil into rough pieces.
  2. 2Heat a large 12-inch skillet over medium-high until hot. Add the olive oil, then tip in the tomatoes cut-side down. Let them sit undisturbed for 2 to 3 minutes until the undersides char and blister and juices start to pool.
  3. 3Add the corn kernels and garlic to the skillet. Season with salt and pepper and cook, stirring once or twice, until the corn is lightly charred in spots and smells sweet, about 3 minutes more. Transfer the tomato-corn mixture to a warm bowl and tent loosely.
  4. 4Wipe the skillet clean and return it to medium-low heat. Add the butter and swirl until foaming subsides. Crack in the eggs and cook gently, stirring slowly with a spatula to form large soft curds.
  5. 5When the eggs are still slightly glossy and just set, fold in most of the chili crisp so ribbons of oil and crunch coat the curds. Remove from heat immediately so they stay creamy.
  6. 6Divide the blistered tomato-corn mixture among four shallow bowls. Spoon the soft eggs over the top.
  7. 7Scatter feta, remaining chili crisp, green onion greens, and torn basil over each bowl. Finish with a final grind of black pepper.
  8. 8Serve right away while the eggs are warm and the tomatoes still release their juices into the bowl. Offer extra chili crisp at the table for heat lovers.
