Chili-Crisp Heirloom Tomato Shakshuka

Ingredients

  • 1.5 lb heirloom tomatoes
  • 2 tbsp extra-virgin olive oil
  • 1 medium yellow onion
  • 3 garlic cloves
  • 2 tbsp chili crisp
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 large eggs
  • 1/2 cup fresh basil leaves
  • 1/3 cup crumbled feta
  • 4 slices crusty bread

Instructions

  1. 1Core the heirloom tomatoes and cut them into rough 1-inch chunks so they release juice quickly in the pan. Dice the onion and mince the garlic while the skillet heats.
  2. 2Warm a 10-inch cast-iron or heavy skillet over medium heat and swirl in the olive oil until it shimmers. Add the onion and cook, stirring often, until translucent and lightly golden at the edges, about 5 minutes.
  3. 3Stir in the garlic, cumin, and smoked paprika; cook just until fragrant, 30 seconds. Tip in the tomato chunks and season with salt and pepper.
  4. 4Raise heat slightly and cook the tomatoes, stirring occasionally and pressing some pieces with a spoon, until they break down into a chunky sauce with simmering juices, 8 to 10 minutes.
  5. 5Fold in most of the chili crisp, reserving a little for finishing. Taste and adjust seasoning so the sauce is bright and gently spicy.
  6. 6Use a spoon to make four shallow wells in the sauce. Crack an egg into each well. Cover the skillet and cook over medium-low until the whites are just set and the yolks are still jammy, 5 to 7 minutes.
  7. 7Remove from heat. Scatter feta and torn basil over the top, then drizzle the remaining chili crisp. Toast the bread until golden and crisp.
  8. 8Serve straight from the skillet: scoop sauce and an egg onto each plate with a slice of toast for dipping. Finish with an extra grind of pepper if desired.
