- 4 English muffins or brioche buns
- 4 large eggs
- 3 Tbsp chili crisp
- 1 cup fresh sweet corn kernels
- 1 large heirloom tomato
- 1/4 small red onion
- 1 Tbsp fresh lime juice
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 3 Tbsp mayonnaise
- 4 slices sharp cheddar or pepper jack
- 2 Tbsp unsalted butter
- 2 Tbsp chopped fresh cilantro or basil
- 1 optional avocado
Instructions
- 1Dice the heirloom tomato and finely mince the red onion. In a small bowl combine the tomato, onion, corn kernels, lime juice, salt, and chopped herbs. Toss gently and let the relish sit so juices mingle while you cook.
- 2Split and toast the English muffins or buns until golden. Spread a thin layer of mayonnaise on the cut sides.
- 3Heat a large nonstick skillet over medium heat. Add half the butter and swirl. Crack the eggs into the skillet, keeping them separate. Season lightly with salt and pepper.
- 4Cook until the whites begin to set, about 2 minutes. Spoon chili crisp over and each egg so the oil sizzles into the whites. Cover briefly if you want the tops set faster. Cook until edges are crispy and yolks are still jammy, 1 to 2 minutes more.
- 5In the last 30 seconds, lay a cheese slice over each egg so it melts from the residual heat.
- 6If using avocado, mash or slice it quickly and season with salt.
- 7Build each sandwich: bottom bun, optional avocado, chili-crisp egg with melted cheese, a generous spoonful of tomato-corn relish, and the top bun. Press gently so the relish juices soak in.
- 8Serve immediately while the egg yolk is still runny and the bun is warm. Have napkins ready—the chili oil and tomato juices make these gloriously messy.
