
Cherry Almond Overnight Oats

Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups unsweetened almond milk
- 1 cup plain Greek yogurt
- 2 cups fresh sweet cherries
- 1/3 cup sliced almonds
- 3 tbsp honey
- 1/2 tsp almond extract
- 1 tsp lemon zest
- 2 tbsp chia seeds
- 1/8 tsp pinch of salt
Instructions
- 1Pit the cherries and roughly chop them into halves and quarters. Place half the cherries in a bowl, drizzle with honey and the lemon zest, then mash lightly with a fork to release juices; set aside to macerate for 5 minutes.
- 2In a large mixing bowl, combine the rolled oats, almond milk, Greek yogurt, remaining honey, almond extract, chia seeds, and salt. Stir vigorously for 30 seconds until everything is evenly moistened and no dry pockets remain.
- 3Fold the macerated cherries and their juices into the oat mixture so the pink color swirls through.
- 4Divide the mixture evenly among four 12-ounce jars or containers. Top each jar with the remaining fresh cherry pieces and a generous sprinkle of sliced almonds.
- 5Seal the jars and refrigerate for at least 6 hours or overnight (up to 3 days). The oats will soften and the cherries will infuse the mixture with bright summer flavor.
- 6In the morning, give each jar a quick stir. If the oats seem too thick, loosen with an extra splash of almond milk.
- 7Taste and add an extra drizzle of honey if desired. The almonds stay crunchy on top for texture contrast.
- 8Serve chilled straight from the jar for a grab-and-go weekday breakfast that still feels fresh and seasonal.
