  • 8 large eggs
  • 2 bell peppers (mixed colors), diced
  • 1 red onion, diced
  • 2 cups frozen spinach, thawed and squeezed dry
  • 1 cup shredded cheddar cheese (cheapest store brand)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add diced bell peppers and red onion; cook 4-5 minutes until softened.
