- 1 medium zucchini
- 1 small yellow onion
- 1/2 red bell pepper
- 4 large eggs
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp fresh chives
- 1/3 cup crumbled feta
Instructions
- 1Dice the zucchini into small half-inch cubes and finely chop the onion and red bell pepper so everything cooks at the same pace.
- 2Heat a large 12-inch cast-iron or heavy skillet over medium-high heat until hot. Add olive oil, then scatter in the corn kernels in a single layer. Let them sit undisturbed for 2 to 3 minutes until the bottoms char and smell sweet and toasty.
- 3Add the onion, bell pepper, and zucchini. Season with smoked paprika, garlic powder, salt, and black pepper. Stir and cook, scraping up any browned bits, until the vegetables soften and develop golden edges, about 6 to 8 minutes.
- 4Push the hash to the sides of the skillet to create four small wells. Crack an egg into each well. Cover the skillet with a lid and reduce heat to medium-low.
