Ingredients

  • 8 small corn tortillas
  • 2 cups fresh sweet corn kernels
  • 2 large heirloom tomatoes
  • 8 large eggs
  • 1 (15 oz) can canned black beans
  • 1/2 medium red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime
  • 1 small jalapeño
  • 2 garlic cloves
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 3 Tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup crumbled cotija cheese

Instructions

  1. 1Drain and rinse the black beans, then warm them in a small saucepan over medium-low heat with a splash of water, cumin, and salt until steamy and soft, about 5 minutes; keep warm.
  2. 2Dice the heirloom tomatoes, finely chop the red onion and jalapeño, mince the garlic, and toss everything in a bowl with chopped cilantro, a squeeze of lime juice, a drizzle of olive oil, salt, and pepper to make a bright pico; set aside so flavors meld.
  3. 3Heat a large cast-iron skillet over medium-high heat until very hot. Add a thin film of olive oil, then scatter in the sweet corn kernels in a single layer.
  4. 4Let the corn sit undisturbed 2–3 minutes until deeply charred on one side, then stir and cook another 2 minutes until blistered and sweet-smelling; season with chili powder, salt, and pepper, then transfer to a plate.
  5. 5Wipe the skillet, reduce heat to medium, and warm the corn tortillas one or two at a time until pliable and lightly toasted, about 30 seconds per side; stack and wrap in a clean towel to keep warm.
  6. 6Add a little more oil to the same skillet. Crack in the eggs (work in batches if needed) and cook sunny-side or over-easy until whites are set but yolks still runny, about 3 minutes, seasoning the tops with salt and pepper.
  7. 7Build each plate with two warm tortillas. Spoon warm black beans down the center, top with charred corn, then carefully slide an egg onto each taco.
  8. 8Spoon generous heirloom pico over the eggs, crumble cotija on top, and finish with an extra squeeze of lime and a few dashes of hot sauce. Serve immediately while the yolks are still glossy.
