
Caramelized Banana Peanut Butter Overnight Oats

Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup unsweetened almond milk or dairy milk
- 1/2 cup plain Greek yogurt
- 3 Tbsp creamy natural peanut butter
- 1 Tbsp chia seeds
- 2 Tbsp, divided pure maple syrup
- 1/2 tsp vanilla extract
- 1/8 tsp pinch of kosher salt
- 2 medium ripe bananas
- 1 Tbsp unsalted butter
- 1/2 tsp ground cinnamon
- 2 Tbsp chopped roasted peanuts
Instructions
- 1In a medium bowl, whisk together oats, milk, Greek yogurt, peanut butter, chia seeds, maple syrup, vanilla, and salt until no dry pockets remain.
- 2Divide the mixture evenly between two 12-oz jars or airtight containers. Cover and refrigerate at least 6 hours or overnight so oats soften and chia gels.
- 3Just before serving, slice bananas into 1/2-inch rounds. Melt butter in a nonstick skillet over medium heat until foamy.
- 4Add banana slices in a single layer and sprinkle with cinnamon and remaining maple syrup. Cook undisturbed 2 minutes until undersides are deeply golden and caramelized.
- 5Flip bananas and cook 1–2 minutes more until soft, glossy, and smelling like banana bread. Remove from heat.
- 6Stir the chilled oats; if too thick, loosen with a splash of milk. Swirl the remaining peanut butter through each jar.
- 7Top each portion with warm caramelized bananas and a sprinkle of chopped peanuts. Eat cold or microwave 45–60 seconds if you prefer them warm.
