Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened almond milk or dairy milk
  • 1/2 cup plain Greek yogurt
  • 3 Tbsp creamy natural peanut butter
  • 1 Tbsp chia seeds
  • 2 Tbsp, divided pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/8 tsp pinch of kosher salt
  • 2 medium ripe bananas
  • 1 Tbsp unsalted butter
  • 1/2 tsp ground cinnamon
  • 2 Tbsp chopped roasted peanuts

Instructions

  1. 1In a medium bowl, whisk together oats, milk, Greek yogurt, peanut butter, chia seeds, maple syrup, vanilla, and salt until no dry pockets remain.
  2. 2Divide the mixture evenly between two 12-oz jars or airtight containers. Cover and refrigerate at least 6 hours or overnight so oats soften and chia gels.
  3. 3Just before serving, slice bananas into 1/2-inch rounds. Melt butter in a nonstick skillet over medium heat until foamy.
  4. 4Add banana slices in a single layer and sprinkle with cinnamon and remaining maple syrup. Cook undisturbed 2 minutes until undersides are deeply golden and caramelized.
  5. 5Flip bananas and cook 1–2 minutes more until soft, glossy, and smelling like banana bread. Remove from heat.
  6. 6Stir the chilled oats; if too thick, loosen with a splash of milk. Swirl the remaining peanut butter through each jar.
  7. 7Top each portion with warm caramelized bananas and a sprinkle of chopped peanuts. Eat cold or microwave 45–60 seconds if you prefer them warm.
