Ingredients
- 2 slices thick-cut sourdough bread
- 1 large ripe avocado
- 4 oz fresh mozzarella, torn or sliced
- 1 medium ripe tomato, sliced
- 2 large eggs
- 8–10 fresh basil leaves
- 1 Tbsp extra-virgin olive oil
- 2 tsp balsamic glaze
- 1/2 tsp flaky sea salt
- 1/4 tsp freshly cracked black pepper
- pinch red pepper flakes (optional)
Instructions
- 1Bring a small saucepan of water to a rolling boil over high heat. Gently lower in the eggs with a spoon and boil exactly 6 1/2 minutes for jammy yolks (7 minutes for slightly firmer). Meanwhile prepare an ice bath.
- 2While eggs cook, toast the sourdough slices until deeply golden and crisp. Rub each hot toast lightly with a cut garlic clove if desired for extra flavor, then drizzle with half the olive oil.
- 3Halve the avocado, remove the pit, and scoop the flesh into a small bowl. Mash roughly with a fork, leaving some chunks. Season with flaky salt and black pepper. Spread the mashed avocado evenly over both toasts.
- 4Arrange tomato slices over the avocado, then tuck torn mozzarella pieces among the tomatoes. Season the tomato and cheese lightly with flaky salt and pepper.
- 5When the timer ends, transfer eggs immediately to the ice bath for 1 minute to stop cooking. Crack and peel under cool running water. Halve each egg lengthwise to reveal the jammy yolk.
- 6Place two egg halves on each toast. Tear fresh basil leaves over the top. Drizzle with remaining olive oil and the balsamic glaze in thin zigzags.
- 7Finish with a final sprinkle of flaky salt, cracked pepper, and optional red pepper flakes. Serve immediately while the toast is still crisp and the eggs are warm.
