  • 2 cups old-fashioned rolled oats
  • 3 ripe peaches
  • 4 Tbsp unsalted butter
  • 2 cups whole milk
  • 1 cup water
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 2 Tbsp fresh basil leaves
  • 1 Tbsp granulated sugar
  • 1/3 cup toasted pecans
  • 1/2 cup Greek yogurt

Instructions

  1. 1Pit and slice the peaches into thick wedges, leaving the skins on for color and texture. Finely chop the basil and toss it with the granulated sugar in a small bowl to make a fragrant basil sugar; set aside.
  2. 2Place a 10-inch cast-iron or heavy skillet over medium heat. Add the butter and cook, swirling often, until it foams, turns golden brown, and smells nutty, about 3 to 4 minutes. Watch closely so it does not burn.
  3. 3Scoop out half of the brown butter into a small dish for finishing. Add the peach slices to the remaining butter in the skillet and cook 2 minutes per side until edges caramelize and fruit softens slightly.
  4. 4Push peaches to the side. Pour oats into the skillet and toast them in the residual butter for 1 minute, stirring constantly until fragrant.
  5. 5Pour in milk, water, maple syrup, vanilla, cinnamon, and salt. Bring to a gentle simmer, then reduce heat to medium-low. Cook, stirring often, until oats are creamy and thickened, 6 to 8 minutes.
