Ingredients

  • 8 slices thick-cut bacon
  • 8 large eggs
  • 2 Tbsp whole milk
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 Tbsp unsalted butter
  • 4 flour tortillas (10-inch)
  • 2 cups pepper jack cheese, shredded
  • 3 green onions, thinly sliced
  • 2 Tbsp fresh cilantro, chopped

Instructions

  1. 1Cook the bacon in a large skillet over medium heat until deeply crisp and rendered, 8 to 10 minutes, flipping halfway. Transfer to a paper-towel-lined plate; once cool enough to handle, roughly chop. Pour off all but bacon fat.
  2. 2In a bowl, whisk the eggs with milk, salt, and black pepper until fully blended and slightly frothy.
  3. 3Melt the butter in the same skillet over medium-low heat. Pour in the eggs and gently scramble, pushing from the edges toward the center with a spatula, until just set but still soft and glossy, 2 to 3 minutes. Remove from heat immediately so they stay creamy.
  4. 4Wipe the skillet clean and set over medium heat. Place one tortilla in the dry pan. Sprinkle shredded pepper jack over half the tortilla, then top with a quarter of the scrambled eggs, chopped bacon, green onions, and cilantro. Add another cheese and fold the empty half over the filling.
  5. 5Cook until the underside is golden-brown and crisp with melted cheese peeking out, about 2 to 3 minutes. Carefully flip with a wide spatula and cook the second side until equally crisp and the cheese is fully melted, another 2 minutes.
  6. 6Transfer to a cutting board and repeat with remaining tortillas and filling, adjusting heat if the pan gets too hot.
  7. 7Let each quesadilla rest 1 minute so the cheese sets slightly, then cut into 3 wedges with a sharp knife or pizza cutter.
  8. 8Serve hot with salsa or hot sauce and a dollop of sour cream on the side for dipping.
