Ingredients
- 2 medium zucchini
- 1 cup fresh sweet corn kernels
- 5 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup grated Parmesan cheese
- 3 scallions, thinly sliced
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- as needed olive oil spray
- 3 Tbsp hot honey
- 1/4 cup fresh basil leaves
Instructions
- 1Trim the zucchini and grate it on the large holes of a box grater into a clean kitchen towel. Squeeze firmly over the sink until almost no liquid remains, then transfer the dry shreds to a large mixing bowl.
- 2Add the fresh corn kernels, four of the eggs, flour, Parmesan, most of the sliced scallions, garlic powder, salt, and pepper to the bowl. Stir until a thick, cohesive batter forms with no dry flour pockets.
- 3Preheat the air fryer to 375°F for 3 minutes. Lightly mist the basket with olive oil spray. Scoop heaping tablespoons of batter and gently flatten into 8 thin fritters, working in batches so they do not touch.
- 4Air-fry the fritters for 8 to 10 minutes, flipping halfway, until the edges are deep golden and the centers feel set and crisp when tapped. Transfer finished fritters to a warm plate and repeat with remaining batter.
- 5While the last batch cooks, bring a small saucepan of water to a gentle boil. Lower the remaining egg into the water and cook exactly 6½ minutes for a jammy yolk. Transfer immediately to an ice bath for 1 minute, then peel carefully.
- 6Slice the soft-boiled egg in half to reveal the runny center. Arrange two fritters per plate, nestle half an egg alongside, and scatter the reserved scallions and torn basil over everything.
- 7Warm the hot honey for 10 seconds in the microwave so it pours easily, then drizzle generously over the fritters and egg. Serve at once while the fritters are still shatter-crisp.
