Ingredients
- 1 cup roasted crickets
- 3/4 cup roasted mealworms
- 1 1/2 cups dark chocolate chips
- 1 tbsp coconut oil
- 1 cup roasted almonds
- 3/4 cup dried cranberries
- 1/2 cup pumpkin seeds
- 1/2 tsp sea salt
- 1/4 tsp flaky finishing salt
Instructions
- 1Line a large rimmed baking sheet with parchment paper and set it near your workspace so the chocolate-coated insects can cool quickly.
- 2Place the dark chocolate chips and coconut oil in a heatproof bowl set over a saucepan of barely simmering water, stirring constantly until the mixture is completely smooth and glossy.
- 3Remove the bowl from the heat and immediately fold in the roasted crickets and roasted mealworms until every insect is thoroughly coated in the melted chocolate.
- 4Spread the chocolate-covered insects in a single layer on the prepared baking sheet, separating any clumps with a fork so they harden individually.
- 5Sprinkle the sea salt evenly over the warm chocolate insects, then transfer the sheet to the refrigerator for 15 minutes until the coating is fully set and snappy.
- 6Meanwhile, combine the roasted almonds, dried cranberries, and pumpkin seeds in a large mixing bowl.
- 7Once the chocolate insects are firm, break apart any remaining clusters and add them to the bowl with the nuts and fruit.
- 8Toss everything gently but thoroughly so the chocolate insects are evenly distributed throughout the mix.
- 9Finish with a light scatter of flaky finishing salt, give one final toss, and portion into airtight jars or serve immediately in small bowls.
- 10Store any leftovers in a cool pantry for up to five days, giving the jar a shake before each serving to redistribute the insects.
