Ingredients
- 1 medium (about 2 lb) butternut squash
- 2 cups late-season cherry tomatoes
- 3 cups cooked farro
- 3 tbsp extra-virgin olive oil
- 3 garlic cloves
- 4 fresh thyme sprigs
- ¾ cup crumbled feta
- 3 cups baby arugula
- ⅓ cup toasted pumpkin seeds
- 2 tbsp fresh lemon juice
- 1 tsp kosher salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes
Instructions
- 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment. Peel and cube the butternut squash into ¾-inch pieces so they roast evenly.
- 2Toss the squash cubes on the pan with most of the olive oil, minced garlic, stripped thyme leaves, salt, pepper, and red pepper flakes until glossy. Spread in a single layer.
- 3Roast 18 minutes, then scatter the cherry tomatoes across the pan. Continue roasting 10–12 minutes more until the squash is caramelized at the edges and the tomatoes have blistered and released juices.
- 4While the vegetables roast, warm the cooked farro in a skillet over medium heat with a splash of water and a drizzle of remaining olive oil until steamy, about 3 minutes.
- 5Fluff the farro and divide it among four bowls as the warm base. Scatter baby arugula over each portion so the greens wilt slightly from the heat.
- 6Spoon the hot roasted squash and burst tomatoes over the grains, scraping any caramelized bits and pan juices onto the bowls.
- 7Top each bowl with crumbled feta and toasted pumpkin seeds for salty crunch. Finish with a squeeze of fresh lemon juice to brighten the squash and tomatoes.
- 8Serve immediately while the squash is still warm and the arugula is just softened. Pack leftovers in meal-prep containers and reheat gently before adding fresh greens.
