Ingredients
- 8 thick slices crusty sourdough or country loaf
- 1 lb peeled sugar pumpkin
- 2 medium crisp apples
- 12 oz mixed mushrooms (cremini and shiitake)
- 1 large shallot
- 2 garlic cloves
- 3 tbsp olive oil
- 1 tbsp butter
- 2 tsp leaves fresh thyme
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 4 oz soft goat cheese
- 1/4 cup toasted pumpkin seeds
- 2 tbsp balsamic glaze
- 2 tbsp snipped fresh chives
Instructions
- 1Preheat oven or toaster oven to 375°F. Arrange the bread slices on a baking sheet and toast 8 to 10 minutes until golden and crisp on the edges but still sturdy.
- 2Cut pumpkin into thin half-moons about 1/4-inch thick. Core apples and slice into matching thin wedges. Thinly slice mushrooms and shallot; mince the garlic.
- 3Heat two tablespoons olive oil and the butter in a large skillet over medium-high heat. Add mushrooms in a single layer and cook undisturbed 3 to 4 minutes until deeply browned on one side.
- 4Stir in shallot, garlic, and thyme. Season with half the salt and pepper. Continue cooking 4 minutes until mushrooms release their liquid and it evaporates, leaving them glossy.
- 5Push mushrooms to the side. Add remaining oil, then the pumpkin slices. Sauté 5 to 6 minutes, turning once, until pumpkin is tender and lightly charred at the edges.
- 6Add apple wedges to the pan and cook 2 to 3 minutes more just until warmed through and slightly softened while still holding shape. Taste and adjust seasoning.
- 7Spread each warm toast generously with goat cheese. Pile the hot mushroom-pumpkin-apple mixture evenly over the cheese.
- 8Drizzle lightly with balsamic glaze, scatter toasted pumpkin seeds and chives on top, and finish with a final grind of pepper.
- 9Serve immediately while the tartines are warm and the bread still has crunch. Perfect for a satisfying open-faced lunch that feels café-special.
