Ingredients

  • 4 small store-bought flatbreads or naan
  • 10 oz mixed mushrooms
  • 1 large crisp apple
  • 6 oz fresh mozzarella
  • 1 tbsp chopped fresh rosemary
  • 1 tsp fresh thyme leaves
  • 2 tbsp chopped fresh parsley
  • 1 garlic clove
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 cups arugula
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp optional red pepper flakes

Instructions

  1. 1Heat the oven to 425°F and place a large sheet pan inside to preheat for a crisper base.
  2. 2Thinly slice the mushrooms and the apple; mince the garlic.
  3. 3In a skillet over medium-high heat warm a splash of olive oil and sauté the mushrooms until browned and their moisture evaporates, about 6 minutes.
  4. 4Stir in the garlic, rosemary, thyme, salt, and pepper for 30 seconds until fragrant, then splash in the balsamic and toss to glaze; remove from heat.
  5. 5Brush the flatbreads lightly with olive oil on both sides.
  6. 6Carefully pull the hot sheet pan from the oven, lay the flatbreads on it, and top each with torn mozzarella, the warm mushroom mixture, and the raw apple slices.
  7. 7Bake 8 to 10 minutes until the edges are golden, the cheese is melted and bubbling, and the apple softens just at the edges while staying bright.
  8. 8Transfer to a cutting board, shower with parsley and fresh arugula, and add red pepper flakes if you like heat.
  9. 9Drizzle a final thread of olive oil, cut each flatbread into wedges, and plate two wedges per person for a satisfying midday share.
  10. 10Eat while warm so the mushrooms stay savory and the apple still tastes fresh against the herbs.
