Ingredients

  • 2 large (about 10-inch) naan or flatbread rounds
  • 10 oz cremini mushrooms
  • 1 large firm apple (Honeycrisp)
  • 1 shallot
  • 2 garlic clove
  • 2 tsp fresh thyme leaves
  • 1 tsp chopped fresh rosemary
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1/3 cup crumbled goat cheese
  • 2 cups baby spinach
  • 1/4 cup toasted pine nuts or pumpkin seeds
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp red pepper flakes
  • 1 tbsp honey for finishing

Instructions

  1. 1Preheat the oven to 450°F and place a large baking sheet or pizza stone inside to heat.
  2. 2Wipe the mushrooms clean and slice them about 1/4-inch thick; thinly slice the shallot and mince the garlic.
  3. 3Heat a large skillet over medium-high heat with most of the olive oil, then add the mushrooms in a single layer and cook undisturbed for 3 to 4 minutes until deeply golden on one side.
  4. 4Stir in the shallot, garlic, thyme, rosemary, salt, pepper, and red pepper flakes; cook another 3 to 4 minutes until the mushrooms release their liquid and it mostly evaporates.
  5. 5Splash in the balsamic vinegar, toss for 30 seconds, then remove the pan from heat so the mushrooms stay savory and glossy.
  6. 6Core the apple and cut it into very thin half-moons so they soften quickly on the hot flatbread.
  7. 7Brush the flatbreads lightly with the remaining olive oil, then spread a generous layer of ricotta over each, leaving a small border.
  8. 8Scatter mozzarella, the warm mushroom mixture, apple slices, and spinach evenly over both flatbreads, then dot with goat cheese.
  9. 9Transfer carefully to the hot baking sheet and bake 8 to 11 minutes until the edges are crisp and golden and the cheese is melted and bubbling.
  10. 10Remove from the oven, let rest 1 minute, then drizzle lightly with honey and sprinkle the toasted seeds over the top.
  11. 11Slice into wedges or squares, arrange on a board, and serve warm so everyone can grab a piece for a casual lunch spread.
