  • 2 cups halved red seedless grapes
  • 1 cup diced English cucumber

  • 3 Tbsp extra-virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup toasted pine nuts

Instructions

  1. 1Wash and dry the tomatoes, grapes, cucumber, and herbs thoroughly so the salad stays crisp.
  2. 2Dice the tomatoes into bite-size pieces and place them in a large mixing bowl, discarding excess watery seeds if the fruit is very juicy.
  3. 3Halve the grapes and dice the cucumber; add both to the bowl with the tomatoes.
  4. 4Finely chop the red onion and scatter it over the produce so every bite gets a little bite.
  5. 5In a small jar or bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt, and black pepper until emulsified.
  6. 6Pour the dressing over the chopped vegetables and fruit and toss gently with a large spoon until everything is lightly coated.
