Ingredients

  • 1 1/2 lb cherry and heirloom tomatoes, mixed colors
  • 2 cans (15 oz each) or 3 cups cooked chickpeas, drained and rinsed
  • 1 large English cucumber
  • 1/4 cup finely diced red onion
  • 1/2 cup chopped fresh parsley
  • 1/3 cup torn fresh basil
  • 3 Tbsp fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 garlic clove
  • 1/2 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup feta cheese, crumbled
  • 3 Tbsp toasted pine nuts or almonds optional

Instructions

  1. 1Halve the cherry tomatoes and cut larger heirloom tomatoes into bite-size wedges; place them in a wide salad bowl so their juices can collect.
  2. 2Pat the chickpeas dry with a clean towel, then add them to the tomatoes; drier chickpeas hold the dressing better and stay pleasantly firm.
  3. 3Dice the cucumber into small cubes and finely dice the red onion; add both along with the chopped parsley and torn basil.
  4. 4In a small jar or bowl, whisk lemon juice, olive oil, minced garlic, cumin, salt, and pepper until the dressing looks creamy and emulsified.
  5. 5Pour the dressing over the tomato-chickpea mixture and toss thoroughly so every chickpea and tomato piece is coated and glossy.
  6. 6Fold in most of the crumbled feta, reserving a little for the top; the cheese softens slightly in the acid and binds the salad.
  7. 7Taste and adjust lemon or salt—late-season tomatoes should taste sweet-bright, not flat. Let the salad sit 10 minutes at room temperature for flavors to marry.
  8. 8If packing for meal prep, divide into airtight containers and keep the optional toasted nuts separate until serving so they stay crunchy.
