Ingredients
- 1 lb smoked chicken breast
- 2 celery stalks
- 1/4 cup red onion
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1/2 tsp smoked paprika
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp fresh chives
- 12 slider buns
- 12 butter lettuce leaves
- 24 dill pickle chips
- 2 tbsp softened butter
Instructions
- 1Shred or finely chop the smoked chicken breast into bite-size pieces and place in a large mixing bowl. Dice the celery and finely mince the red onion, then add both to the chicken.
- 2In a small bowl, whisk together the mayonnaise, Dijon mustard, fresh lemon juice, smoked paprika, kosher salt, and black pepper until smooth and creamy.
- 3Pour the dressing over the chicken mixture and fold gently until every piece is evenly coated. Taste and adjust salt or lemon if needed.
- 4Snip the fresh chives and fold them into the salad. Cover and refrigerate at least 30 minutes so the flavors meld; this can sit up to a day ahead for easy hosting.
- 5Just before serving, split the slider buns and lightly butter the cut sides. Toast them cut-side down in a large skillet or on a medium grill (about 350°F) for 1 to 2 minutes until golden and warm.
- 6Lay a butter lettuce leaf on each bottom bun so the salad does not soak the bread.
- 7Spoon a generous mound of chilled smoked chicken salad onto each lettuce-lined bun.
- 8Top each slider with two dill pickle chips, cap with the toasted top bun, and press gently.
- 9Arrange the sliders on a large platter. Serve immediately or keep chilled up to 1 hour so guests can grab them throughout lunch.
