
Roasted Grape & Tomato Grain Bowl

Ingredients
- 1 1/2 cups dry farro
- 2 cups seedless red grapes
- 2 cups cherry tomatoes
- 1 medium delicata squash
- 1 large crisp apple
- 4 tbsp extra-virgin olive oil
- 1 1/4 tsp kosher salt
- 3/4 tsp freshly ground black pepper
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 4 cups baby arugula
- 1 can (15 oz), drained cooked chickpeas
- 1/2 cup crumbled goat cheese
- 1/3 cup toasted walnuts
- 1/3 cup fresh basil leaves
- 2 tbsp balsamic vinegar
- 1 tsp lemon zest
Instructions
- 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment. Rinse the farro, then simmer it in salted water according to package directions until tender with a pleasant chew, about 25–30 minutes; drain well.
- 2Halve the grapes and cherry tomatoes. Slice the delicata squash into thin half-moons, leaving the edible skin on, and scoop out the seeds.
- 3Spread the grapes, tomatoes, and squash on the sheet pan. Drizzle with most of the olive oil, then season with salt, pepper, cumin, and smoked paprika. Toss until everything is evenly coated and arranged in a single layer.
- 4Roast for 18–22 minutes, stirring once halfway, until the squash is golden at the edges, the tomatoes have collapsed, and the grapes look jammy and caramelized.
- 5While the produce roasts, dice the apple into small cubes and toss with a splash of balsamic to keep it bright. Warm the chickpeas briefly in a skillet with a drizzle of olive oil if desired.
- 6Fluff the drained farro with a fork and divide it among four bowls as the base. Scatter arugula over each portion so it wilts slightly from the residual heat.
- 7Spoon the hot roasted grapes, tomatoes, and squash over the grains. Add the chickpeas and diced apple.
- 8Crumble goat cheese on top, then finish with toasted walnuts, torn basil, lemon zest, and a final drizzle of olive oil and balsamic.
- 9Serve warm or at room temperature; the sweet roasted fruit and squash make this bowl feel abundant and lunch-ready.
