Ingredients
- 3 medium ripe peaches
- 2 large bell peppers (mixed red and yellow)
- 1 medium English cucumber
- 1/2 cup packed fresh basil leaves
- 1/4 cup fresh mint leaves
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- 3/4 teaspoon flaky sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup toasted sliced almonds
- 1/2 cup crumbled feta cheese
Instructions
- 1Wash and dry the peaches, peppers, cucumber, and herbs thoroughly. Halve the peaches, remove the pits, and slice them into thin wedges, placing them in a large mixing bowl.
- 2Core the bell peppers and slice them into thin strips the same width as the peach wedges so every bite has balance. Add the pepper strips to the bowl with the peaches.
- 3Trim the cucumber ends, halve it lengthwise, and scoop out the seeds if they are watery. Slice into thin half-moons and add them to the bowl.
- 4Stack the basil and mint leaves, roll them tightly, and slice into thin ribbons. Scatter the herb ribbons over the fruit and vegetables.
- 5In a small jar or bowl, whisk together the olive oil, lime juice, honey, sea salt, and black pepper until the dressing looks glossy and emulsified.
- 6Pour the dressing over the salad and toss gently with clean hands or two large spoons so the peaches stay intact and everything is lightly coated.
- 7Let the salad sit at room temperature for 5 minutes so the salt draws a little juice and the flavors marry. Taste and adjust salt or lime if needed.
- 8Just before serving, sprinkle the toasted almonds and crumbled feta evenly over the top. Divide into bowls or pack into lunch containers, keeping any extra dressing separate if packing ahead.
