Ingredients

  • 3 cups fresh corn kernels (from 4 ears)
  • 1 large, julienned red bell pepper
  • 1 large, julienned yellow or orange bell pepper
  • 1 small, seeded and minced jalapeño
  • 2 cups thinly shredded red cabbage
  • 4, thinly sliced scallions
  • 1/3 cup chopped fresh basil
  • 1/4 cup chopped fresh cilantro or extra basil
  • 3 tbsp fresh lime juice
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup toasted pepitas or sunflower seeds

Instructions

  1. 1Shuck the corn and stand each ear upright in a wide bowl. Slice downward with a sharp knife to remove the kernels in clean strips; scrape the cob lightly for extra milk.
  2. 2Add the julienned red and yellow peppers, minced jalapeño, shredded red cabbage, and sliced scallions to the corn.
  3. 3In a small bowl whisk lime juice, olive oil, apple cider vinegar, honey, salt, and black pepper until the dressing looks glossy and balanced.
  4. 4Pour the dressing over the raw vegetables and toss thoroughly with tongs so every strand and kernel is coated.
  5. 5Fold in the chopped basil and cilantro. Taste and add another pinch of salt or squeeze of lime if the slaw needs more pop.
  6. 6Let the slaw sit 10 minutes at room temperature so the cabbage softens slightly and the corn releases sweetness into the dressing.
  7. 7Just before serving, sprinkle toasted pepitas over the top for crunch.
