Parsnip Apple Grilled Cheese

Classic American grilled cheese takes a harvest turn when sweet parsnip coins and crisp apple nestle with sharp cheddar. A quick skillet sear softens the roots and fruit so every buttery bite stays melty and bright.

Ingredients

  • 2 medium parsnips
  • 1 crisp apple
  • 4 oz sharp cheddar cheese
  • 4 slices whole-grain bread
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme leaves
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tsp Dijon mustard

Instructions

  1. 1Peel the parsnips and cut them into thin coins about 1/4-inch thick. Core the apple and slice it into matching thin rounds so everything cooks evenly.
  2. 2Heat the olive oil in a medium skillet over medium heat. Add the parsnip coins in a single layer, season with salt and pepper, and cook 4 to 5 minutes per side until golden and tender when pierced.
  3. 3In the last two minutes add the apple slices to the same pan so they soften slightly and pick up a little color but still hold their shape. Sprinkle with thyme leaves and remove from heat.
  4. 4Grate the cheddar or cut it into thin slices so it melts quickly. Lay out the four bread slices and spread a thin layer of Dijon on the inside of each.
  5. 5Build two sandwiches: layer half the cheese, then warm parsnips and apples, then the remaining cheese. Cap with the second bread slice.
  6. 6Wipe the skillet clean and melt half the butter over medium-low heat. Place both sandwiches in the pan and cook 3 to 4 minutes until the underside is deep golden and crisp.
  7. 7Add the remaining butter, carefully flip the sandwiches, and cook another 3 to 4 minutes. Press gently with a spatula so the cheese melts fully and the edges seal.
  8. 8Transfer to a cutting board and let rest one minute so the filling sets. Slice each sandwich on the diagonal.
  9. 9Serve immediately while the cheese is still stretchy and the roots are warm. Pair with a simple green salad or leftover soup for a complete midday plate.
