Ingredients
- 8 oz fresh mixed wild mushrooms
- 1 small crisp apple
- 2 thick country bread slices
- 1 garlic clove
- 1 small shallot
- 1 tsp fresh thyme leaves
- 1 tsp chopped fresh tarragon
- 2 tbsp olive oil
- 1 tbsp whole-grain mustard
- 3 oz soft goat cheese
- 1/2 tsp lemon zest
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup baby watercress or arugula
- 2 tbsp chopped toasted hazelnuts
Instructions
- 1Heat a medium skillet over medium-high heat and add olive oil. Once shimmering, add the cleaned, sliced mushrooms and cook undisturbed 3 minutes to develop deep browning.
- 2Add the finely minced shallot and thyme. Continue cooking 4–5 minutes, stirring occasionally, until the mushrooms are caramelized and any liquid has evaporated. Season with salt and pepper, then take off the heat.
- 3Toast the bread slices until the edges are golden and the centers are still slightly soft. While hot, rub each slice lightly with the cut side of a garlic clove.
- 4Spread a thin layer of whole-grain mustard over each toast, then dollop and gently smear the soft goat cheese so it covers the surface in creamy patches.
- 5Spoon the warm sautéed mushrooms evenly over the cheese. The heat will soften the goat cheese slightly so it clings to the bread.
- 6Shave the apple into paper-thin slices with a mandoline or sharp knife and fan them over the mushrooms for juicy contrast.
- 7Scatter lemon zest, chopped tarragon, and toasted hazelnuts across the top. Finish with a small handful of watercress or arugula for peppery freshness.
- 8Serve the tartines open-faced right away while the toast is crisp and the mushrooms are still warm. Cut each in half if packing for a portable lunch.
