  • 4 thick slices date nut bread
  • 4 oz Brie cheese
  • 2 oz sharp white cheddar
  • 2 tbsp unsalted butter
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • 1 cup baby arugula
  • 1 tsp honey
  • to taste black pepper

Instructions

  1. 1Set a large cast-iron skillet or griddle over medium heat and let it warm for 3 minutes until a drop of water sizzles gently.
  2. 2Spread a thin layer of Dijon on one side of each date nut bread slice; the mustard cuts the sweetness of the dates.
  3. 3Layer thin slices of Brie and shredded cheddar on the mustard side of two slices, then sprinkle thyme and a grind of black pepper over the cheese.
  4. 4Top each with a small handful of arugula and the remaining bread slices, mustard side down, to form two sandwiches.
  5. 5Butter the outer faces of both sandwiches generously so they crisp evenly.
  6. 6Place the sandwiches in the hot skillet and cook 3 to 4 minutes until the bottom bread is deep golden and the cheese begins to soften.
  7. 7Flip carefully with a wide spatula, press lightly, and cook another 3 to 4 minutes until the second side is equally browned and cheese oozes at the edges.
  8. 8Transfer to a cutting board, drizzle a tiny thread of honey across the tops, rest 1 minute, then slice diagonally and serve immediately while the cheese is still stretchy.
