  • 2 cups fresh sweet corn kernels
  • 2 cups cherry tomatoes
  • 1 large ripe peach
  • 6 mini sweet peppers

  • 4 oz crumbled goat cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup toasted sunflower seeds

Instructions

  1. 1If the farro is not already cooked, simmer it in salted water according to package timing until pleasantly chewy, then drain and cool slightly so it stays fluffy.
  2. 2In a large skillet over medium-high heat, warm a thin film of olive oil. Add the corn kernels and mini sweet peppers cut into rings; sauté 4 to 5 minutes until corn browns in spots and peppers soften.
  3. 3Halve the cherry tomatoes and dice the peach and cucumber into bite-size pieces. Tear the basil into ribbons so the leaves perfume the whole bowl.
  4. 4Whisk the remaining olive oil with white wine vinegar, Dijon, honey, salt, and black pepper until the dressing is smooth and lightly thickened.
