Ingredients
- 8 slices soft white sandwich bread
- 3 tbsp unsalted butter
- 1 medium fresh cucumber
- 1 large ripe tomato
- 2 cups fresh watercress or baby spinach
- 4 oz soft goat cheese or cream cheese
- 2 tbsp fresh chives
- 1 tsp lemon zest
- 1 tsp honey
- 1/4 tsp sea salt
- 1/4 tsp freshly cracked black pepper
- 1/4 cup edible flower petals or microgreens
Instructions
- 1Set the soft bread slices on a clean board and lightly toast them in a dry skillet over medium-low heat just until the surfaces turn pale gold and still stay pliable, about 1 minute per side.
- 2In a small bowl, mash the soft cheese with softened butter, snipped chives, lemon zest, honey, sea salt, and a grind of pepper until the spread is cloud-light and flecked with green.
- 3Using a mandoline or sharp knife, slice the cucumber into paper-thin rounds and the tomato into delicate half-moons so light can almost pass through them.
- 4Spread a generous cloud of the herbed cheese mixture over each warm toast, reaching all the way to the crusts so every bite stays moist.
- 5Layer overlapping cucumber rounds across half the toasts, then tuck tomato slices and a soft nest of watercress or spinach on the remaining halves.
- 6Gently press matching pairs together into open-faced sky sandwiches, or leave them open for a floating-garden look that feels lifted from the clouds.
- 7Scatter edible flower petals or delicate microgreens across the tops like floating seeds on a breeze.
- 8Trim crusts if desired for a neat castle-tea shape, then cut each sandwich into two tidy triangles or rectangles that fit easily in a lunch tin.
- 9Wrap loosely in parchment or pack in a shallow bento so the greens stay crisp and the cheese does not weep.
- 10Serve at cool room temperature with a thermos of mild herbal tea, imagining the sandwiches drifting above green hills.
