ThemedLunchAmericanSlawRaw Assembly

Ingredients

  • 3 large crisp apples
  • 6 oz cremini mushrooms
  • 4 cups shredded green cabbage
  • 1 large carrot
  • 1/4 cup chopped fresh dill
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 4 scallions
  • 1/3 cup toasted pumpkin seeds
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp whole-grain mustard
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp lemon juice

Instructions

  1. 1Shred the cabbage finely with a sharp knife or mandoline and place it in a very large mixing bowl.
  2. 2Peel the carrot and grate it on the large holes of a box grater; add to the cabbage.
  3. 3Core the apples and cut into thin matchsticks; toss at once with lemon juice so they stay bright white and crisp.
  4. 4Wipe mushrooms clean and slice them into the thinnest possible ribbons so they blend into the slaw texture.
  5. 5Thinly slice the scallions on a sharp bias, including the green tops.
  6. 6In a small bowl whisk olive oil, apple cider vinegar, maple syrup, whole-grain mustard, salt, and pepper until the dressing looks creamy and emulsified.
  7. 7Add the apple matchsticks, mushroom ribbons, and scallions to the cabbage-carrot base.
  8. 8Pour the dressing over everything and toss thoroughly with tongs for a full minute so the cabbage softens slightly and every strand is coated.
  9. 9Fold in the chopped dill, mint, and cilantro gently so the herbs stay vivid and do not bruise.
  10. 10Taste and adjust seasoning with an extra pinch of salt or splash of vinegar if the apples need more brightness.
  11. 11Transfer to a wide shallow bowl or platter, scatter toasted pumpkin seeds over the top for crunch, and let the slaw sit 5 minutes so flavors marry.
  12. 12Serve family-style with extra herbs on the side for guests to scatter; perfect for picnic or potluck lunch tables.
