  • 4 thick slices date nut bread
  • 4 oz sharp cheddar cheese
  • 2 oz cream cheese
  • 2 tbsp unsalted butter
  • 1 tsp honey
  • 1/2 tsp fresh thyme leaves optional
  • to taste pinch black pepper

Instructions

  1. 1Let the cream cheese soften slightly at room temperature for easier spreading.
  2. 2In a small bowl, mash the cream cheese with the honey, optional thyme, and a grind of black pepper until spreadable.
  3. 3Lay out the date nut bread slices and spread a thin layer of the seasoned cream cheese on the inner side of each slice.
  4. 4Slice or grate the sharp cheddar and divide it evenly between two of the slices, piling it over the cream cheese.
  5. 5Close the sandwiches with the remaining slices, cream-cheese side down, and press gently.
  6. 6Heat a large skillet or griddle over medium-low heat so the cheese melts before the bread burns.
  7. 7Spread or brush the outer sides of each sandwich lightly with softened butter.
  8. 8Place the sandwiches in the hot skillet and cook 3 to 4 minutes on the first side until the bread is deep golden and crisp and the cheese begins to soften.
