Ingredients

  • 2 cups cooked short-grain rice
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 8 oz firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • 2 cups baby spinach
  • 1 medium carrot
  • 1 small cucumber
  • 1 cup edamame pods
  • 2 soft-boiled eggs
  • 1 tsp black sesame seeds
  • 2 tbsp pickled ginger
  • 4 shiso leaves

Instructions

  1. 1Rinse and warm the cooked short-grain rice gently if needed, then fold in the rice vinegar, sugar, and salt until every grain glistens with a soft sheen; set aside covered with a damp cloth so it stays pillowy.
  2. 2Press the firm tofu between clean towels for 10 minutes to release excess water, then cut into neat bite-sized cubes that look like little forest stones.
  3. 3Whisk soy sauce, mirin, maple syrup, and sesame oil in a small bowl; toss the tofu cubes in this glaze and pan-sear them in a nonstick skillet over medium heat for 6–8 minutes, turning until golden on all sides and fragrant.
  4. 4Bring a small pot of water to a gentle boil and blanch the baby spinach for 30 seconds until just wilted and vivid green; plunge into ice water, squeeze dry, and form into two tidy bundles.
  5. 5Peel the carrot into long pastel ribbons with a vegetable peeler and thinly slice the cucumber into half-moons that look like dewdrops; steam or microwave the edamame pods until bright and tender, about 3 minutes, then sprinkle lightly with salt.
  6. 6Soft-boil the eggs for exactly 7 minutes in simmering water, transfer to an ice bath, peel carefully, and halve them so the yolks stay jammy and golden like tiny suns.
  7. 7Divide the seasoned rice between two bento compartments, nestling it into soft mounds; arrange the glazed tofu, spinach bundles, carrot ribbons, cucumber, edamame, and egg halves in cheerful pastel sections like a forest picnic spread.
  8. 8Scatter black sesame seeds over the rice, tuck pickled ginger and fresh shiso leaves into the corners for a bright herbal finish, and close the lids gently so the boxes travel like gifts from the woodland sprites.
